Looks like we are leaning towards the tropics, a coastal settlement in warm clime.

Leaving Valley Dude to the healing class of Cleric or druid

Coastal settlement is fine by me.
I'm leaning towards Cleric.
Not to give the DM too much work (Know you hate that) but if you could tell me which deities grant which domain options in this sub setting, it would help me make up my mind faster.
